Rich, deeply savory, and built entirely from whole ingredients, this braised duck stew is the kind of cold-weather cooking that makes your kitchen smell incredible for hours. Every component here is naturally free of dairy, so there's no swapping, substituting, or second-guessing — just bold, clean flavor from start to finish. The duck legs are seared in coconut oil until the skin turns deep golden brown, then slowly braised in a broth spiked with pomegranate juice, apple cider vinegar, turmeric, and ginger, which gives the whole pot a complexity that tastes far more involved than it actually is. Ten cloves of smashed garlic and a full pound of cremini mushrooms melt into the liquid over nearly two hours of low, gentle heat, creating a broth that's almost silky without a drop of cream or butter anywhere near it. Carrots, celery, and onion round out the vegetables, so this is genuinely a one-pot meal that needs nothing more than a ladle and a bowl. A scatter of fresh parsley at the end brightens everything up and adds a little color to what is otherwise a gloriously dark, aromatic stew. If you've ever felt like dairy-free cooking means sacrificing richness, this recipe is a very convincing argument otherwise.

Pat the duck legs thoroughly dry with paper towels and season all over with 1 tsp fine sea salt. Drying the skin is essential for a good sear — wet skin will steam rather than brown.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 7–9 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the flesh side for 3 minutes. Transfer the duck legs to a plate and pour off all but about 1 tbsp of the rendered fat, reserving the rest for another use.
