Rich, deeply savory, and built entirely from whole ingredients, this braised duck stew is the kind of cold-weather cooking that makes your kitchen smell incredible for hours. Every component here is naturally free of added sweeteners — the pomegranate juice brings a subtle tartness, the apple cider vinegar lifts the braising liquid, and the bone broth adds body without any of the hidden additives you'd find in store-bought shortcuts. That matters more than it sounds, because packaged broths, vinegars, and even some fruit juices are surprisingly common sources of high fructose corn syrup sneaking into otherwise clean recipes. Here, you control every ingredient from start to finish. The technique is straightforward: sear the duck legs until the skin is deep golden and crackling, build a fragrant base of garlic, onion, carrots, celery, and mushrooms, then let everything braise low and slow until the meat is falling off the bone. Turmeric and ginger round out the broth with warmth and a little earthiness that makes this feel like more than just a weeknight stew. Finish each bowl with a scatter of fresh parsley and you've got something genuinely impressive that doesn't compromise on what goes into it.

Pat the duck legs thoroughly dry with paper towels and season all over with 1 tsp fine sea salt. Drying the skin is essential for a good sear — wet skin will steam rather than brown.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 7–9 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the flesh side for 3 minutes. Transfer the duck legs to a plate and pour off all but about 1 tbsp of the rendered fat, reserving the rest for another use.
