Rich, deeply savory, and built entirely from whole ingredients, this braised duck stew is the kind of cold-weather comfort food that earns a permanent spot in your rotation. Duck legs are seared until the skin turns a deep, crackling gold before being nestled into a fragrant broth of pomegranate juice, bone broth, apple cider vinegar, and a full ten cloves of garlic — the result is layered and complex without a single grain of flour in sight. Cremini mushrooms add an earthy, meaty depth, while turmeric and ginger give the braising liquid a subtle warmth that builds with every spoonful. Because the whole dish is built around naturally grain-free ingredients, there's no need to swap or substitute anything — it just works, start to finish. The long, low braise does the heavy lifting, coaxing the duck meat until it's completely falling-off-the-bone tender and the vegetables have soaked up all that gorgeous, herb-scented liquid. A scatter of fresh parsley at the end brightens everything up and makes it look as good as it tastes. This is the kind of stew that makes people ask for the recipe before they've even finished their bowl.

Pat the duck legs thoroughly dry with paper towels and season all over with 1 tsp fine sea salt. Drying the skin is essential for a good sear — wet skin will steam rather than brown.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 7–9 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the flesh side for 3 minutes. Transfer the duck legs to a plate and pour off all but about 1 tbsp of the rendered fat, reserving the rest for another use.
