Rich, deeply savory, and built entirely from whole, recognizable ingredients, this braised duck stew is the kind of meal that makes a cold evening feel like a special occasion. Every component — from the smashed garlic and cremini mushrooms to the pomegranate juice and bone broth — is exactly what it says it is, with no hidden additives or processing aids to worry about. That matters more than it might seem, because emulsifiers have a way of sneaking into packaged broths, vinegars, and even spice blends, making a dish like this genuinely hard to pull off without cooking from scratch. Here, everything is clean and straightforward. The duck legs get a long, slow braise that coaxes the meat into falling-off-the-bone tenderness, while the braising liquid deepens into something almost wine-like thanks to the apple cider vinegar and pomegranate juice. Turmeric and ginger add a subtle warmth that ties the whole pot together without overwhelming the earthy mushrooms or the richness of the duck. Finish each bowl with a scatter of fresh parsley and you have a stew that looks and tastes like it took serious effort — even though the oven does most of the work.

Pat the duck legs thoroughly dry with paper towels and season all over with 1 tsp fine sea salt. Drying the skin is essential for a good sear — wet skin will steam rather than brown.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 7–9 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the flesh side for 3 minutes. Transfer the duck legs to a plate and pour off all but about 1 tbsp of the rendered fat, reserving the rest for another use.
