Rich, deeply savory, and built entirely without a drop of dairy, this braised duck stew is the kind of cold-weather cooking that makes your whole kitchen smell incredible. Duck legs are seared in coconut oil until the skin turns a deep, crackling gold, then slowly braised in a fragrant mix of bone broth, pomegranate juice, and apple cider vinegar — a combination that gives the braising liquid a subtle tartness and real depth. Cremini mushrooms, carrots, celery, and a full ten cloves of smashed garlic round out the pot, soaking up every bit of flavor as the stew gently simmers. Ground turmeric and ginger add a warm, earthy undertone that makes this feel more complex than the ingredient list might suggest. Because the recipe leans on whole vegetables, fresh herbs, and naturally rich duck fat for its body and flavor, there's no need for butter, cream, or any dairy-based thickener — the braising liquid becomes its own silky, satisfying sauce. After nearly two hours of low, slow cooking, the meat is completely falling-off-the-bone tender and the broth is something you'll want to drink straight from the bowl. A scatter of fresh parsley at the end brightens everything up just before serving.

Pat the duck legs thoroughly dry with paper towels and season all over with 1 tsp fine sea salt. Drying the skin is essential for a good sear — wet skin will steam rather than brown.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 7–9 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the flesh side for 3 minutes. Transfer the duck legs to a plate and pour off all but about 1 tbsp of the rendered fat, reserving the rest for another use.
