Rich, deeply savory, and built for slow cooking, this braised duck stew is the kind of meal that fills the whole kitchen with an aroma you won't want to leave. Duck legs are a fantastic alternative when you're steering clear of poultry like chicken, delivering even more flavor and a luxuriously tender texture after a long, low braise. The skin gets a proper golden sear in coconut oil before the whole thing is nestled into a fragrant broth of pomegranate juice, apple cider vinegar, and bone broth — that combination sounds unexpected, but it creates a braising liquid with real depth and a subtle tang that balances the richness of the duck beautifully. Cremini mushrooms, carrots, celery, and ten whole smashed garlic cloves round out the pot, turning soft and silky as they absorb all that braised goodness over nearly two hours. A whisper of turmeric and ground ginger adds warmth without overpowering the other flavors. By the time the lid comes off, the meat is falling off the bone and the broth has transformed into something you'll want to spoon up every last drop of. Finish with a scatter of fresh parsley and serve it straight from the Dutch oven for a dinner that feels genuinely special.

Pat the duck legs thoroughly dry with paper towels and season all over with 1 tsp fine sea salt. Drying the skin is essential for a good sear — wet skin will steam rather than brown.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 7–9 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the flesh side for 3 minutes. Transfer the duck legs to a plate and pour off all but about 1 tbsp of the rendered fat, reserving the rest for another use.
