Rich, deeply savory, and built for a slow braise, this duck stew is the kind of meal that makes the whole kitchen smell incredible for hours. Duck legs are seared until the skin turns a deep, crackling gold before being nestled into a fragrant broth of pomegranate juice, bone broth, apple cider vinegar, and warming spices — the result is fall-off-the-bone tender meat with a braising liquid that tastes like it took far more effort than it did. Cremini mushrooms, carrots, celery, and a full ten cloves of garlic round out the pot, making this a genuinely complete one-pot dinner. The pomegranate juice adds a subtle tartness that balances the richness of the duck beautifully, while turmeric and ginger give the broth a gentle warmth without overpowering the other flavors. Every ingredient here is naturally free from tree nuts of any kind, so there's no label-scanning or substitution anxiety — just straightforward, whole-food cooking. A scatter of fresh parsley at the end brightens everything up and makes the finished bowls look as good as they taste. This is the kind of stew you make on a slow Sunday and think about for the rest of the week.

Pat the duck legs thoroughly dry with paper towels and season all over with 1 tsp fine sea salt. Drying the skin is essential for a good sear — wet skin will steam rather than brown.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 7–9 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the flesh side for 3 minutes. Transfer the duck legs to a plate and pour off all but about 1 tbsp of the rendered fat, reserving the rest for another use.
