Rich, deeply savory, and built entirely around duck, this braised stew is a satisfying answer for anyone steering clear of beef without wanting to sacrifice any of the comfort or depth that a long, slow braise delivers. Duck legs are genuinely one of the best cuts for this kind of cooking — the fat renders down during that nearly two-hour braise, leaving the meat falling-off-the-bone tender and the broth silky and full-bodied. Cremini mushrooms, smashed garlic, and a generous bundle of fresh thyme and rosemary do a lot of the heavy lifting on flavor, while pomegranate juice and apple cider vinegar add a subtle brightness that keeps the whole pot from feeling heavy. A pinch of turmeric and ground ginger round things out with just enough warmth to make every spoonful interesting. The technique is straightforward — sear the duck skin until it's deep golden, build the vegetables in the same pot, and let the oven do the rest — so the payoff feels way bigger than the effort involved. Scattered with fresh parsley and ladled over plenty of that glossy braising broth, this is the kind of stew that makes a cold evening feel like an occasion.

Pat the duck legs thoroughly dry with paper towels and season all over with 1 tsp fine sea salt. Drying the skin is essential for a good sear — wet skin will steam rather than brown.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 7–9 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the flesh side for 3 minutes. Transfer the duck legs to a plate and pour off all but about 1 tbsp of the rendered fat, reserving the rest for another use.
