Rich, deeply savory, and built entirely from whole ingredients, this braised duck stew is the kind of one-pot meal that makes the whole house smell incredible. Many store-bought broths, sauces, and even seasoning blends sneak in grain-based additives, so cooking from scratch like this gives you full control over every component — and every ingredient here is naturally free of barley and any grain-based thickeners. The duck legs are seared in coconut oil until the skin turns a deep, crackling gold, then braised low and slow in a broth spiked with pomegranate juice, apple cider vinegar, turmeric, and ginger — a combination that sounds unexpected but produces a braise that is complex, slightly tangy, and beautifully aromatic. Cremini mushrooms, carrots, celery, and a generous amount of smashed garlic round out the pot, soaking up all that braising liquid as the duck becomes completely fall-off-the-bone tender. The pomegranate juice adds a subtle fruitiness that balances the richness of the duck without making the dish taste sweet. A scatter of fresh parsley at the end brightens everything up just before serving. This is the kind of recipe that rewards patience — and the result is absolutely worth every minute on the stove.

Pat the duck legs thoroughly dry with paper towels and season all over with 1 tsp fine sea salt. Drying the skin is essential for a good sear — wet skin will steam rather than brown.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 7–9 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the flesh side for 3 minutes. Transfer the duck legs to a plate and pour off all but about 1 tbsp of the rendered fat, reserving the rest for another use.
