Rich, slow-braised duck with earthy cremini mushrooms, sweet carrots, and a deeply savory broth — this is the kind of stew that makes a cold evening feel like a special occasion. Every ingredient here is whole and unprocessed, from the bone-in duck legs to the fresh herbs and vegetables, so there's no need to scan labels for synthetic dyes or artificial additives hiding in a sauce packet or seasoning blend. The braising liquid gets its gorgeous color and complexity from pomegranate juice, apple cider vinegar, and a touch of turmeric and ginger — real food doing all the heavy lifting. Searing the duck skin until it's deep golden brown before the long braise builds a flavor foundation that makes the finished stew taste like it came from a serious restaurant kitchen. After nearly two hours of low, gentle cooking, the meat is completely falling-off-the-bone tender and the broth is silky and fragrant with rosemary and thyme. A handful of fresh parsley scattered over the top at the end adds a bright, clean finish that ties everything together beautifully.

Pat the duck legs thoroughly dry with paper towels and season all over with 1 tsp fine sea salt. Drying the skin is essential for a good sear — wet skin will steam rather than brown.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 7–9 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the flesh side for 3 minutes. Transfer the duck legs to a plate and pour off all but about 1 tbsp of the rendered fat, reserving the rest for another use.
