Rich, deeply savory, and built entirely from whole ingredients you can actually recognize, this braised duck stew is the kind of meal that makes your kitchen smell incredible for hours. Every element pulling flavor here is the real thing — smashed garlic, fresh thyme and rosemary, cremini mushrooms, pomegranate juice, and a splash of apple cider vinegar that brightens the whole pot. There are no flavor packets, no seasoning blends with mystery additives, and no shortcuts that would compromise the integrity of the dish. The duck legs are seared in coconut oil until the skin turns deep golden brown, then slowly braised in bone broth until the meat is completely falling-off-the-bone tender — that's pure technique doing the heavy lifting, not artificial enhancement. Ground turmeric and ginger add warmth and depth in a way that's completely clean and straightforward. If you've ever been frustrated by store-bought stews or seasoning mixes loaded with synthetic flavor compounds, cooking this from scratch is genuinely satisfying on a different level. Ladle it into bowls with plenty of broth and a scatter of fresh parsley, and you've got a showstopper that needs absolutely nothing else.

Pat the duck legs thoroughly dry with paper towels and season all over with 1 tsp fine sea salt. Drying the skin is essential for a good sear — wet skin will steam rather than brown.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 7–9 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the flesh side for 3 minutes. Transfer the duck legs to a plate and pour off all but about 1 tbsp of the rendered fat, reserving the rest for another use.
