Rich, slow-braised duck with a deeply savory broth is exactly the kind of comfort food that can feel off-limits when you're navigating alpha-gal syndrome — but this stew is built entirely around ingredients that work beautifully within those boundaries. Duck, bone broth, coconut oil, and a lineup of fresh vegetables and herbs mean there's no mammalian meat or hidden dairy to worry about, just pure, satisfying flavor from start to finish. The magic starts with a proper sear on the duck legs, coaxing the skin to a deep golden brown before the long, low braise does its thing. Pomegranate juice and apple cider vinegar bring a subtle brightness to the broth that balances the earthiness of the cremini mushrooms and the warmth of turmeric and ginger. After nearly two hours in the pot, the duck becomes fall-off-the-bone tender, and the braising liquid transforms into something you'll want to spoon up every last drop of. A handful of fresh parsley scattered over the top at the end adds a pop of color and freshness that makes the whole bowl feel a little special. This is the kind of stew that rewards patience and fills the kitchen with an aroma that makes everyone wander in asking what's for dinner.

Pat the duck legs thoroughly dry with paper towels and season all over with 1 tsp fine sea salt. Drying the skin is essential for a good sear — wet skin will steam rather than brown.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 7–9 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the flesh side for 3 minutes. Transfer the duck legs to a plate and pour off all but about 1 tbsp of the rendered fat, reserving the rest for another use.
