Rich, slow-braised duck stew is the kind of deeply satisfying cold-weather cooking that feels almost impossibly luxurious — and this version absolutely delivers. Duck legs are seared until the skin turns a deep, crackling golden brown before being nestled into a fragrant braise built on smashed garlic, cremini mushrooms, sweet carrots, and celery. Pomegranate juice and apple cider vinegar bring a subtle brightness that cuts through the richness of the duck, while turmeric and ginger add a gentle warmth that makes the whole pot smell incredible. After nearly two hours of low, slow braising, the meat is so tender it practically falls from the bone on its own. Every single ingredient here is naturally free from almonds and tree nut concerns — no specialty swaps needed, just honest, whole-food pantry staples doing exactly what they're supposed to do. A scatter of fresh flat-leaf parsley at the end adds a pop of color and freshness that rounds the whole bowl out beautifully. This is the kind of stew you make on a Sunday afternoon and think about for the rest of the week.

Pat the duck legs thoroughly dry with paper towels and season all over with 1 tsp fine sea salt. Drying the skin is essential for a good sear — wet skin will steam rather than brown.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 7–9 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the flesh side for 3 minutes. Transfer the duck legs to a plate and pour off all but about 1 tbsp of the rendered fat, reserving the rest for another use.
