Rich, deeply savory, and built entirely from whole-food ingredients, this braised duck stew is the kind of slow-cooked comfort that makes a healing way of eating feel genuinely indulgent. Duck legs are seared in coconut oil until the skin turns deep golden brown, then braised low and slow in bone broth with carrots, celery, cremini mushrooms, and a generous head's worth of garlic — no grains, no nightshades, no dairy, nothing that conflicts with the autoimmune protocol. A splash of pomegranate juice and apple cider vinegar add brightness and depth to the braising liquid in a way that feels almost like a red wine braise, without straying outside compliant ingredients. Turmeric and ginger bring gentle warmth and their well-known anti-inflammatory reputations to every spoonful. The long braise — nearly two hours over low heat — does all the heavy lifting, leaving the meat falling-tender off the bone and the broth silky and complex. Serves four, so it's ideal for a family dinner or a batch-cook situation where you want leftovers that taste even better the next day. Fresh parsley scattered over the top at the end adds a pop of color and a clean herbal finish that ties the whole bowl together.

Pat the duck legs thoroughly dry with paper towels and season all over with 1 tsp fine sea salt. Drying the skin is essential for a good sear — wet skin will steam rather than brown.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 7–9 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the flesh side for 3 minutes. Transfer the duck legs to a plate and pour off all but about 1 tbsp of the rendered fat, reserving the rest for another use.
