Fermented foods have a reputation for long ingredient lists and mysterious additives, but this sauerkraut is built from nothing but cabbage, salt, garlic, and a handful of fresh herbs — no stabilizers, no thickeners, no fillers of any kind. That matters a lot when you're navigating store-bought options, where xanthan gum and other gums can sneak into packaged fermented products as texture agents. Here, the brine is created entirely by salt drawing moisture out of the cabbage itself, so the process is as clean and natural as fermentation gets. The garlic, thyme, rosemary, and bay leaf transform what could be a plain, sharp kraut into something genuinely aromatic and complex — the kind of condiment you'll want piled onto sausages, tucked into sandwiches, or eaten straight from the jar with a fork. The hands-on time is minimal; most of the work happens on the counter over one to two weeks while the good bacteria do their thing. Daily check-ins keep everything submerged and on track, and once it hits your preferred level of tang, it moves to the fridge and holds beautifully for months. It's one of those recipes that rewards patience with a result that tastes far more impressive than the effort involved.

Remove 2–3 outer leaves from the cabbage and set them aside. Quarter the cabbage, remove the core, and shred it as thinly as possible — about 1/8-inch ribbons — using a chef's knife or mandoline.
Weigh the shredded cabbage in a large mixing bowl. Add the sea salt at a ratio of 1.5–2% of the cabbage's weight (the 1 tbsp listed is calibrated for 2 lb / 900 g of cabbage). Toss well, then massage and squeeze the cabbage firmly with clean hands for 8–10 minutes, until it releases a significant amount of liquid and the shreds become limp and translucent.
