Tangy, garlicky, and fragrant with woody herbs, this homemade fermented cabbage is the kind of condiment that quietly upgrades everything it touches — from grain bowls to grilled sausages to a simple cheese board. The ingredient list is refreshingly short: green cabbage, sea salt, garlic, thyme, rosemary, and a bay leaf. That's it. No spice blends, no store-bought shortcuts, and absolutely nothing that could sneak in the golden spice that so many fermented and pickled products rely on for color or flavor. The process is a slow, satisfying one. You massage the cabbage until it weeps its own brine, pack it into mason jars with the garlic and herb sprigs, and let time and natural fermentation do the rest. Checking the jars daily and watching the sourness develop over a week or two is genuinely rewarding — you're in full control of every ingredient from start to finish. That kind of transparency is hard to find in a jar off the grocery shelf, where label-reading can feel like a scavenger hunt. Once it hits your preferred level of tang, it moves to the fridge and keeps beautifully for up to three months, ready to brighten any meal you put it next to.

Remove 2–3 outer leaves from the cabbage and set them aside. Quarter the cabbage, remove the core, and shred it as thinly as possible — about 1/8-inch ribbons — using a chef's knife or mandoline.
Weigh the shredded cabbage in a large mixing bowl. Add the sea salt at a ratio of 1.5–2% of the cabbage's weight (the 1 tbsp listed is calibrated for 2 lb / 900 g of cabbage). Toss well, then massage and squeeze the cabbage firmly with clean hands for 8–10 minutes, until it releases a significant amount of liquid and the shreds become limp and translucent.
