Fermented foods are a fantastic way to add bold, tangy flavor to meals, but store-bought sauerkraut can be a minefield of hidden additives and iodized salt — both of which matter when you're watching iodine intake. This homemade version sidesteps all of that by using explicitly non-iodized fine sea salt and nothing but fresh cabbage, garlic, and garden herbs. The result is a deeply savory, pleasantly sour kraut that you control from start to finish. The process is pure fermentation magic: salt draws moisture out of the cabbage, creating its own natural brine, and the garlic, thyme, rosemary, and bay leaf slowly perfume every ribbon as the days tick by. There's no vinegar shortcut here — just real lacto-fermentation that builds complexity you simply can't get from a jar off the shelf. By day five you can start tasting, and somewhere between one and two weeks you'll hit that perfect balance of tang and crunch. Beyond the dietary peace of mind, this kraut is genuinely delicious piled onto grain bowls, tucked alongside roasted vegetables, or eaten straight from the jar with a fork. It keeps in the fridge for up to three months, so one batch goes a long way.

Remove 2–3 outer leaves from the cabbage and set them aside. Quarter the cabbage, remove the core, and shred it as thinly as possible — about 1/8-inch ribbons — using a chef's knife or mandoline.
Weigh the shredded cabbage in a large mixing bowl. Add the sea salt at a ratio of 1.5–2% of the cabbage's weight (the 1 tbsp listed is calibrated for 2 lb / 900 g of cabbage). Toss well, then massage and squeeze the cabbage firmly with clean hands for 8–10 minutes, until it releases a significant amount of liquid and the shreds become limp and translucent.
