Tangy, garlicky, and fragrant with woody herbs, this fermented kraut is a serious upgrade from anything you'd pull off a grocery store shelf. Shredded green cabbage is massaged with sea salt until it releases its own natural brine, then layered with sliced garlic, thyme, rosemary, and a bay leaf before being packed into mason jars to ferment low and slow at room temperature. The whole process relies on nothing but cabbage, salt, and aromatics — no vinegar shortcuts, no additives, and absolutely nothing in the ingredient list that would raise a flag for anyone avoiding celery or celery-derived ingredients. Fermented foods can be surprisingly tricky to vet at the store, since seasoning blends and pickling mixes sometimes sneak in celery seed or celery salt, so making your own from scratch is genuinely the safest and most satisfying route. The daily check-ins during the first week are oddly meditative, and by day seven or so you'll have a jar of deeply sour, complex kraut that tastes like it came from a proper fermentation crock. Pile it on sausages, stir it into grain bowls, or eat it straight from the jar — it keeps in the fridge for up to three months, so one batch goes a long way.

Remove 2–3 outer leaves from the cabbage and set them aside. Quarter the cabbage, remove the core, and shred it as thinly as possible — about 1/8-inch ribbons — using a chef's knife or mandoline.
Weigh the shredded cabbage in a large mixing bowl. Add the sea salt at a ratio of 1.5–2% of the cabbage's weight (the 1 tbsp listed is calibrated for 2 lb / 900 g of cabbage). Toss well, then massage and squeeze the cabbage firmly with clean hands for 8–10 minutes, until it releases a significant amount of liquid and the shreds become limp and translucent.
