Fermented foods have a reputation for being fussy, but this kraut proves otherwise โ just cabbage, salt, garlic, and a handful of fresh herbs doing exactly what they've done for centuries. The sourness you taste at the end of fermentation comes entirely from natural lactic acid bacteria already living on the cabbage, which means there's no vinegar shortcut, no sweetener, and absolutely nothing added to rush or artificially flavor the process. Sliced garlic, thyme, rosemary, and a single bay leaf infuse the brine as it develops, giving the finished kraut a savory, almost Mediterranean depth that goes way beyond the plain stuff in a store-bought jar. Because the only ingredients are vegetables, salt, and herbs, you never have to squint at a nutrition label wondering where hidden sugars crept in. The hands-on work is mostly that satisfying 8โ10 minute massage that coaxes the brine right out of the cabbage โ after that, time and temperature do the heavy lifting. Daily check-ins keep things on track, and by day five you can start tasting until it hits exactly the level of tang you love. Pack it onto grain bowls, pile it onto eggs, or eat it straight from the jar โ it earns a permanent spot in the fridge door.

Remove 2โ3 outer leaves from the cabbage and set them aside. Quarter the cabbage, remove the core, and shred it as thinly as possible โ about 1/8-inch ribbons โ using a chef's knife or mandoline.
Weigh the shredded cabbage in a large mixing bowl. Add the sea salt at a ratio of 1.5โ2% of the cabbage's weight (the 1 tbsp listed is calibrated for 2 lb / 900 g of cabbage). Toss well, then massage and squeeze the cabbage firmly with clean hands for 8โ10 minutes, until it releases a significant amount of liquid and the shreds become limp and translucent.
