Peel the plantains by cutting off both ends, scoring the skin lengthwise along the ridges, and pulling the peel away in sections. Cut the flesh into 1-inch rounds.
Heat 6 tbsp of the olive oil in a large skillet over medium heat until shimmering. Add the plantain rounds in a single layer — work in two batches if needed to avoid crowding — and fry for 4–5 minutes per side, until deep golden and tender when pierced with a fork.
