Preheat the oven to 375°F (190°C). In a small bowl, stir together the yogurt, grated garlic, chopped dill, and lemon juice until smooth. Set aside at room temperature while you prepare the skillet.
Heat 2 tbsp of the olive oil in a 12-inch oven-safe skillet over medium-high heat until shimmering. Add the cauliflower florets in a single layer and cook undisturbed for 4–5 minutes, until the undersides are golden brown. Stir and continue cooking for another 3–4 minutes, until the florets are lightly charred in spots and just beginning to soften. Transfer to a plate.
