Fresh strawberries and bright lime come together in a drink that tastes like summer in a glass. The homemade syrup is the real star here — simmering the berries with maple syrup and lime zest coaxes out a gorgeous deep-pink liquid that's naturally sweet and intensely fruity. Because everything is made from scratch with whole, simple ingredients, there's no need to scan labels for hidden additives or fermented sweeteners that can sneak into store-bought mixers and sodas. The syrup gets strained smooth, then combined with fresh lime juice and topped with chilled sparkling water for a fizzy, refreshing finish. It's the kind of drink that looks impressive enough for a dinner party but comes together with minimal effort. Garnish with a sprig of mint and a lime wheel and it's practically begging to be photographed before you drink it.

Combine the maple syrup, water, strawberries, and lime zest in a small saucepan over medium heat. Cook, stirring occasionally, until the strawberries soften and begin to break down and the syrup turns a deep pink, about 4–5 minutes.
Remove the saucepan from the heat and let the mixture cool for 15 minutes. Pour through a fine-mesh strainer into a pitcher, pressing the solids firmly with the back of a spoon to extract as much liquid as possible. Discard the solids.
