This vibrant drink is everything a warm-weather refresher should be — bright, fruity, and just tart enough to keep you coming back for another sip. Fresh strawberries are simmered down with maple syrup, water, and lime zest into a gorgeous deep-pink syrup that does all the heavy lifting on flavor. Straining the cooked fruit through a fine-mesh sieve gives you a silky, jewel-toned base that looks almost too pretty to drink. A generous pour of fresh lime juice sharpens the sweetness, and chilled sparkling water brings the whole thing to life with a satisfying fizz. Every single ingredient here is naturally free of soy — no emulsifiers, no hidden additives, just real fruit, citrus, and a touch of maple. Garnish with a sprig of mint and a lime wheel and it looks like something you'd pay twelve dollars for at a rooftop bar. This is the kind of drink that disappears fast, so you might want to double the syrup batch right from the start.

Combine the maple syrup, water, strawberries, and lime zest in a small saucepan over medium heat. Cook, stirring occasionally, until the strawberries soften and begin to break down and the syrup turns a deep pink, about 4–5 minutes.
Remove the saucepan from the heat and let the mixture cool for 15 minutes. Pour through a fine-mesh strainer into a pitcher, pressing the solids firmly with the back of a spoon to extract as much liquid as possible. Discard the solids.
