When strawberries are at their peak, this sparkling cooler is one of the most refreshing things you can pour into a glass. Fresh strawberries are gently simmered with maple syrup, water, and lime zest until they break down into a gorgeous deep-pink syrup that smells absolutely incredible. Straining out the solids gives you a silky, jewel-toned base that mixes beautifully with bright fresh lime juice and chilled sparkling water. The result is something that tastes far more special than the handful of simple ingredients would suggest — fruity, tart, and just sweet enough. It's a great option for backyard gatherings, brunches, or any afternoon when you want something a little more elevated than plain lemonade. Finish each glass with a mint sprig and a lime wheel and it looks like something straight off a restaurant menu.

Combine the maple syrup, water, strawberries, and lime zest in a small saucepan over medium heat. Cook, stirring occasionally, until the strawberries soften and begin to break down and the syrup turns a deep pink, about 4–5 minutes.
Remove the saucepan from the heat and let the mixture cool for 15 minutes. Pour through a fine-mesh strainer into a pitcher, pressing the solids firmly with the back of a spoon to extract as much liquid as possible. Discard the solids.
