This vibrant, fruit-forward cooler is the kind of drink that makes a hot afternoon feel like a celebration. Fresh strawberries are simmered down with maple syrup, lime zest, and a splash of water until they melt into a gorgeous deep-pink syrup that tastes like summer in a glass. Bright lime juice sharpens the sweetness, and chilled sparkling water gives the whole thing a refreshing, effervescent lift. Every single ingredient here is naturally plant-based and completely free of fungi in any form — no broths, no umami boosters, no hidden extras to second-guess. It comes together in one small saucepan and a pitcher, making it as low-effort as it is impressive. Dress each glass with a mint sprig and a lime wheel and it looks like something you'd order at a rooftop bar, no mixologist required.

Combine the maple syrup, water, strawberries, and lime zest in a small saucepan over medium heat. Cook, stirring occasionally, until the strawberries soften and begin to break down and the syrup turns a deep pink, about 4–5 minutes.
Remove the saucepan from the heat and let the mixture cool for 15 minutes. Pour through a fine-mesh strainer into a pitcher, pressing the solids firmly with the back of a spoon to extract as much liquid as possible. Discard the solids.
