There is something undeniably refreshing about a drink built entirely from real, whole ingredients — no artificial colors, no mystery additives, just bright fruit and citrus doing all the heavy lifting. Fresh strawberries are simmered down with maple syrup and lime zest into a gorgeous deep-pink syrup that smells as good as it tastes. A squeeze of fresh lime juice sharpens everything up before chilled sparkling water turns it into a proper, fizzy cooler. Since every single ingredient here is naturally free of dairy, there is zero label-reading stress — just pour and enjoy. The homemade syrup step is genuinely easy and makes the whole drink taste like something you'd pay too much for at a fancy café. A sprig of mint and a lime wheel on the rim take it from casual to company-worthy in about two seconds.

Combine the maple syrup, water, strawberries, and lime zest in a small saucepan over medium heat. Cook, stirring occasionally, until the strawberries soften and begin to break down and the syrup turns a deep pink, about 4–5 minutes.
Remove the saucepan from the heat and let the mixture cool for 15 minutes. Pour through a fine-mesh strainer into a pitcher, pressing the solids firmly with the back of a spoon to extract as much liquid as possible. Discard the solids.
