Few drinks capture the feeling of a sun-drenched afternoon quite like a fresh strawberry-lime cooler made entirely from scratch. Real strawberries are simmered down with maple syrup and lime zest into a gorgeous deep-pink syrup that tastes nothing like anything from a bottle. A fine-mesh strainer does the heavy lifting, pulling out every drop of that jewel-toned liquid before it meets a generous pour of fresh lime juice. Topped off with chilled sparkling water over ice, the result is bright, lightly sweet, and genuinely refreshing. Every single ingredient here is naturally free from hidden additives or sneaky vegetable fillers — just fruit, citrus, a touch of maple, and bubbles. Optional mint and lime wheels make it look like something you'd pay twelve dollars for at a rooftop bar, but it comes together in your own kitchen with almost no effort.

Combine the maple syrup, water, strawberries, and lime zest in a small saucepan over medium heat. Cook, stirring occasionally, until the strawberries soften and begin to break down and the syrup turns a deep pink, about 4–5 minutes.
Remove the saucepan from the heat and let the mixture cool for 15 minutes. Pour through a fine-mesh strainer into a pitcher, pressing the solids firmly with the back of a spoon to extract as much liquid as possible. Discard the solids.
