Bright, citrusy, and refreshingly herbal, this sparkling drink is the kind of thing you'll want to make on repeat all summer long. Fresh orange juice and lime juice form the backbone of the flavor, while a homemade maple-mint simple syrup adds a subtle sweetness that feels far more interesting than plain sugar. Muddling the mint leaves into the warm syrup and letting them steep draws out every bit of that cool, fragrant oil before it ever hits your glass. The whole thing comes together in a pitcher, finishes with chilled sparkling water, and lands somewhere between a fancy mocktail and a backyard refresher. Naturally, there's nothing grain-based hiding in here β just whole, clean ingredients that happen to be completely free of rice and rice-derived additives. Garnished with a lime wedge and a sprig of fresh mint, it looks as good as it tastes.

Combine the water and maple syrup in a small saucepan over medium heat, stirring until the maple syrup fully dissolves, about 2 minutes. Remove from the heat.
Add the mint leaves to the warm syrup and press them gently with a muddler or the back of a wooden spoon until fragrant and slightly bruised. Let the mint steep for 15 minutes, then strain through a fine-mesh strainer into a pitcher, pressing the leaves to extract as much syrup as possible. Discard the spent mint.
