Fresh citrus and garden mint come together in a sparkling drink that feels like summer in a glass. The mint simple syrup is made by steeping bruised fresh leaves in warm maple syrup, which pulls out every bit of herbal fragrance before you even add the juice. Freshly squeezed orange and lime juice keep things bright and tangy, while chilled sparkling water gives the whole thing a satisfying fizz. Because every ingredient here is whole and unprocessed, you never have to second-guess what's actually in your glass β no preservatives, no additives, just real food. Many store-bought drinks and flavored sodas sneak in preservatives that people following a nitrate- and nitrite-free lifestyle need to avoid, so making your own is genuinely the smarter move. The gentle stir at the end keeps the carbonation alive, so each pour stays lively right through the last sip. Dress it up with a lime wedge and a sprig of mint and it looks every bit as good as it tastes.

Combine the water and maple syrup in a small saucepan over medium heat, stirring until the maple syrup fully dissolves, about 2 minutes. Remove from the heat.
Add the mint leaves to the warm syrup and press them gently with a muddler or the back of a wooden spoon until fragrant and slightly bruised. Let the mint steep for 15 minutes, then strain through a fine-mesh strainer into a pitcher, pressing the leaves to extract as much syrup as possible. Discard the spent mint.
