Bright citrus and cool mint come together in a drink that feels like summer in a glass. Freshly squeezed orange and lime juice give it a vivid, tangy backbone, while a homemade maple mint syrup adds just enough sweetness without any of the processed additives you'd find lurking in store-bought flavored syrups or bottled beverages. Carrageenan β a common thickener and stabilizer used in many commercial drinks and dairy-free creamers β has no place here, because every single ingredient is whole and unprocessed. The mint syrup comes together in minutes on the stovetop, and steeping the leaves in warm syrup coaxes out a fragrant, herbal depth that pre-made syrups simply can't match. A gentle pour of chilled sparkling water at the end keeps the bubbles lively and the whole thing refreshingly light. Serve it over ice with a lime wedge and a sprig of fresh mint, and it looks as good as it tastes β no special equipment or hard-to-find ingredients required.

Combine the water and maple syrup in a small saucepan over medium heat, stirring until the maple syrup fully dissolves, about 2 minutes. Remove from the heat.
Add the mint leaves to the warm syrup and press them gently with a muddler or the back of a wooden spoon until fragrant and slightly bruised. Let the mint steep for 15 minutes, then strain through a fine-mesh strainer into a pitcher, pressing the leaves to extract as much syrup as possible. Discard the spent mint.
