Tart, icy, and bursting with real strawberry flavor, this blended drink is the kind of thing you want in your hand the moment the temperature climbs. It comes together with nothing but fresh fruit, citrus, a quick homemade simple syrup, and ice — meaning every single ingredient is exactly what it sounds like, no hidden additives or mystery stabilizers to worry about. That matters more than you might think, because plenty of store-bought frozen drinks and flavored syrups sneak in gelatin or other animal-derived thickeners to achieve that smooth, slushy texture. Here, the blender does all the work, and the result is genuinely creamy-looking without any of that. The balance of sweet and tart is totally adjustable right in the blender, so you can dial it up with extra lemon juice or mellow it out with a little more syrup depending on your mood. Garnish with a lemon slice and a sprig of fresh mint and it looks like something you'd pay way too much for at a café. Refreshing, fuss-free, and completely clean — this one earns a permanent spot in your warm-weather rotation.

Combine the sugar and 1/3 cup water in a small saucepan over medium heat, stirring until the sugar is fully dissolved, about 2–3 minutes. Remove from heat and let the syrup cool to room temperature, then refrigerate until cold, at least 30 minutes.
Add the hulled strawberries, lemon juice, cold water, ice cubes, and all of the chilled simple syrup to a blender. Blend on high until completely smooth and slushy, about 45–60 seconds.
