2 tbsp coconut oil

For serving

2 tbsp unsalted sunflower seeds, roughly chopped (optional)
2 tbsp unsweetened shredded coconut (optional)

Instructions

1
Line a baking sheet with parchment paper. Insert a wooden pop stick or skewer into the flat end of each peeled banana, pushing it about halfway through. Place the bananas on the prepared baking sheet and freeze for 30 minutes, until firm to the touch.
2
Combine the carob chips and coconut oil in a small saucepan over low heat, stirring constantly until fully melted and smooth, about 3–5 minutes. Remove from heat and let cool for 2 minutes — the coating should be fluid but not steaming.
