Summer sipping doesn't get much better than this — a vibrant, fruit-forward lemonade built on real strawberries, blueberries, and freshly squeezed lemon juice. The secret weapon is a homemade vanilla simple syrup made with maple syrup and a whole vanilla bean, which gives the drink a warm, floral sweetness that no store-bought mix can touch. Muddling the berries directly in the pitcher coaxes out their natural juice and color, turning the whole thing a gorgeous deep pink-purple before you even pour a drop. You can strain it smooth for a clean, elegant glass or leave the berry pulp in for something a little more rustic and textured — both versions are completely irresistible. Every single ingredient here is plant-based and naturally free from anything aquatic, so there's zero label-reading stress involved. It's the kind of drink that looks like it came from a fancy brunch spot but comes together with a saucepan, a pitcher, and about half an hour of easy work. Serve it over a big pile of ice with a sprig of fresh mint and watch it disappear.

Combine the maple syrup, 1/2 cup water, vanilla bean seeds, and the scraped pod in a small saucepan over medium heat. Stir until the maple syrup is fully dissolved, about 2 minutes, then remove from the heat and let the syrup steep for 20 minutes.
Strain the syrup through a fine-mesh strainer into a small bowl or measuring cup, discarding the vanilla pod. Let the syrup cool to room temperature, about 10 minutes.
