There is something almost luxurious about a glass of freshly squeezed orange juice, especially when you know exactly what went into it. Navel and Valencia oranges are both excellent choices here — navel for their sweetness and ease, Valencia for a slightly more complex, tangy flavor that really shines when the fruit is ripe. The optional pinch of salt is a small but clever touch that rounds out the natural sweetness and makes the citrus flavor pop in a way that bottled juice simply cannot replicate. Straining out the seeds and pulp takes only a few extra seconds and gives you that clean, bright sip you'd expect from a good café. This is the kind of recipe that reminds you how good simple, whole ingredients can taste when you let them do the work.

Halve 4 large oranges crosswise. Press each half firmly onto a citrus juicer and twist to extract the juice, working over a measuring cup or bowl until all halves are juiced — you should have about 2 cups of juice.
Pour the juice through a fine-mesh strainer into glasses to remove seeds and excess pulp, or skip the strainer if you prefer pulpy juice. Add a pinch of salt, if using, and stir briefly. Serve immediately.
