There is something deeply calming about a cup of fresh mint tea, and this version is as clean and pure as it gets. The recipe calls for just three simple ingredients — water, fresh mint, and a touch of optional honey — so there is nothing hidden, nothing processed, and nothing to second-guess. Steeping the rinsed sprigs in water that has rested just off the boil coaxes out that bright, cooling fragrance without turning the tea bitter. The result is a pale green-gold brew that smells incredible and tastes even better. It comes together in minutes and works beautifully as an after-dinner digestif, a midday reset, or a soothing wind-down before bed. Simple, wholesome, and completely fuss-free.
