Carrageenan is a sneaky additive that shows up in all kinds of bottled drinks, flavored syrups, and even some store-bought lemonades, making it genuinely tricky to find a refreshing sip you can trust. This homemade version sidesteps all of that by relying entirely on whole, recognizable ingredients — fresh lemons, oranges, maple syrup, and mint. The mint simple syrup is a small but brilliant touch: steeping fresh leaves in warm maple syrup pulls out a cool, herbal fragrance that makes every glass feel a little fancy. Bright citrus from both lemon and orange gives the drink a layered tartness that's more interesting than your average lemonade, and the maple syrup rounds it out with a subtle warmth instead of a flat, sugary sweetness. You can easily dial the flavor up or down at the end — a splash more lemon juice if you like it sharp, a little extra water if you want something lighter. Poured over ice with a sprig of mint and a citrus slice, it looks as good as it tastes.

Combine the maple syrup and 1/2 cup water in a small saucepan over medium heat, stirring until the syrup is fully dissolved, about 2 minutes. Remove from heat.
Add the mint leaves to the warm syrup and press them gently with a muddler or the back of a wooden spoon until fragrant. Let the mint steep for 10 minutes, then strain out and discard the leaves.
