Few things are as comforting as a bowl of homemade chicken soup, and this version is built from scratch with fresh, whole ingredients that keep histamine levels in check. The key here is using truly fresh chicken — not previously frozen and thawed — and getting it into the pot the same day, which makes a real difference for anyone managing histamine sensitivity. Bone-in, skin-on thighs are seared first to build a golden, savory base before simmering low and slow with carrots, parsnips, celery, onion, garlic, and a generous bundle of fresh thyme, rosemary, and parsley. That long, gentle simmer draws out a deeply flavored broth without relying on store-bought stock, which often contains additives, fermented ingredients, or flavor enhancers that can be problematic. Everything gets finished simply — shredded chicken, bright chopped parsley, and optional white rice to make it a full, satisfying meal. Leftovers are handled with care too, with the instructions calling for refrigeration or freezing within two hours to keep histamine formation to a minimum. This is the kind of nourishing, feel-good soup that proves eating carefully doesn't mean eating boringly.

On a low histamine diet, fresh poultry is naturally low in histamine, but levels climb as it is stored, so this depends on starting with very fresh or properly frozen chicken rather than on anything the recipe itself guarantees. It is likely fine when freshly cooked. If you prefer to always avoid bone in skin on chicken thighs, please tap it and change its rating to Red.

Pat the chicken thighs dry with paper towels. Heat the olive oil in a large 6-quart pot over medium-high heat until shimmering. Add the chicken thighs skin-side down and sear undisturbed for 4–5 minutes, until the skin is golden and releases easily from the pot.
Flip the chicken and sear the second side for 2 minutes. Transfer the chicken to a plate and set aside. Pour off all but about 1 tablespoon of fat from the pot.
