Sweet, delicate crab meat gets folded with crisp carrot matchsticks and thinly sliced celery, then tossed in a creamy dressing built from fresh ricotta, olive oil, and a bright hit of apple cider vinegar. Fresh parsley, chives, and tarragon keep every bite herbaceous and light, while butter lettuce leaves turn the whole thing into an easy, hand-held cup that's as pretty as it is refreshing. Letting the salad rest for fifteen minutes before serving lets those bright, herby flavors settle into the crab without overpowering its natural sweetness. This is exactly the kind of seafood-forward, olive oil–driven dish that fits beautifully into a Mediterranean way of eating — light, fresh, and full of good fats and lean protein. It's a great low-effort starter or lunch when you want something that feels indulgent but stays firmly in that Mediterranean-friendly lane. Serve it straight from the platter and let everyone build their own lettuce cup at the table.

If starting with whole live crab, bring a large pot of well-salted water to a rolling boil. Add the crab and cook for 10–12 minutes, until the shell is bright orange-red and the legs pull away easily. Transfer to a colander and run under cold water for 2 minutes to stop the cooking. Pick the meat immediately — do not refrigerate and re-pick later. If using pre-picked fresh crab meat purchased the same day, proceed directly to step 2.
In a small bowl, whisk together the ricotta, apple cider vinegar, and olive oil until smooth and creamy. Stir in the parsley, chives, tarragon, and salt until evenly combined. Taste and adjust salt as needed.
