Preheat the oven to 425°F (220°C). Combine the red bell pepper, zucchini, and cherry tomatoes on a rimmed baking sheet. Drizzle with 2 tbsp olive oil, sprinkle with 1/2 tsp salt and 1/4 tsp black pepper, and toss to coat. Spread in a single layer and roast for 20–25 minutes, until the edges are lightly charred and the tomatoes have collapsed.
While the vegetables roast, combine the lentils, bay leaf, thyme sprigs, and 1 tsp salt in a large saucepan. Cover with 4 cups of cold water. Bring to a boil over high heat, then reduce to a steady simmer and cook for 20–25 minutes, until the lentils are tender but still hold their shape — they should have a slight firmness at the center, not be mushy.
