A slow-braised chuck roast is one of those deeply satisfying meals that fills the whole house with an irresistible aroma, and this version delivers every bit of that comfort. The braising liquid is where things get really interesting — pomegranate juice, apple cider vinegar, bone broth, and a touch of honey come together to create something rich, slightly tangy, and beautifully complex. Coconut aminos stand in for soy sauce, keeping the whole dish free from wheat without sacrificing any of that savory depth. The roast braises low and slow alongside carrots, parsnips, and celery until everything is meltingly tender and the meat pulls apart with almost no effort. Turmeric and ginger in the spice rub give the crust a warm, golden color and a subtle earthiness that makes each bite feel a little more special. This is the kind of one-pot dinner that works just as well for a quiet Sunday as it does for feeding a crowd, and the leftovers — if there are any — taste even better the next day.

Preheat the oven to 325°F (165°C). Pat the chuck roast thoroughly dry with paper towels. In a small bowl, combine 1 tsp of the salt, the turmeric, and the ginger, then rub the mixture evenly over all sides of the roast.
Heat the coconut oil in a large Dutch oven over medium-high heat until shimmering. Add the roast and sear undisturbed for 4–5 minutes per side, until a deep brown crust forms and the meat releases easily from the pot. Transfer the seared roast to a plate.
