Slow-braised beef chuck is exactly the kind of deeply satisfying, nourishing meal that feels made for a season when your body is working overtime. The roast is seasoned with turmeric and ginger before getting a proper sear, building a rich, caramelized crust that makes the whole kitchen smell incredible. It then braises low and slow in a braising liquid built from bone broth, pomegranate juice, and honey — ingredients that bring real depth without anything you'd need to second-guess. Carrots, parsnips, and celery cook right alongside the meat, soaking up all that savory-sweet liquid until they're meltingly tender. The internal temperature reaches well above the safe threshold for beef, so you can sit down to this meal with complete peace of mind. Coconut aminos stand in for soy sauce, keeping the flavor complex while sidestepping common additives found in conventional condiments. It's the kind of one-pot dinner that tastes like it took serious effort but mostly just asks you to be patient — and the result is absolutely worth it.

Cook all meat thoroughly when pregnant.

Preheat the oven to 325°F (165°C). Pat the chuck roast thoroughly dry with paper towels. In a small bowl, combine 1 tsp of the salt, the turmeric, and the ginger, then rub the mixture evenly over all sides of the roast.
Heat the coconut oil in a large Dutch oven over medium-high heat until shimmering. Add the roast and sear undisturbed for 4–5 minutes per side, until a deep brown crust forms and the meat releases easily from the pot. Transfer the seared roast to a plate.
