Few things are more satisfying than a slow-braised chuck roast that practically falls apart at the touch of a fork, and this French country version delivers exactly that kind of deep, soul-warming comfort. The beef is rubbed with turmeric and ginger before being seared in coconut oil, building a gorgeous crust that locks in flavor before the long, slow braise does its magic. Pomegranate juice, apple cider vinegar, bone broth, and a touch of honey create a braising liquid that is tangy, subtly sweet, and absolutely rich — nothing out of a packet or a can. Carrots, parsnips, and celery soak up all of that savory goodness as they cook alongside the roast, so every component on the plate is worth fighting over. Lupin is a legume that quietly shows up in flour blends, spice mixes, and packaged sauces, but every ingredient here is straightforward and easy to verify, which makes this a genuinely stress-free cook. Fresh thyme, rosemary, and bay leaves round out the aromatics, and a scatter of flat-leaf parsley at the end keeps things bright and a little rustic. This is the kind of centerpiece dish that makes a whole house smell incredible and earns you serious compliments at the table.

Preheat the oven to 325°F (165°C). Pat the chuck roast thoroughly dry with paper towels. In a small bowl, combine 1 tsp of the salt, the turmeric, and the ginger, then rub the mixture evenly over all sides of the roast.
Heat the coconut oil in a large Dutch oven over medium-high heat until shimmering. Add the roast and sear undisturbed for 4–5 minutes per side, until a deep brown crust forms and the meat releases easily from the pot. Transfer the seared roast to a plate.
