Slow-braised and deeply satisfying, this French country-style pot roast is the kind of meal that fills the kitchen with an aroma so good you'll be hovering by the oven long before it's done. The chuck roast gets rubbed with turmeric and ginger before a hard sear builds a gorgeous crust, then it braises low and slow in a rich liquid of bone broth, pomegranate juice, and apple cider vinegar until it's fall-apart tender. Those braising ingredients aren't just there for flavor — bone broth, ACV, and anti-inflammatory spices like turmeric are all staples of a gut-supportive kitchen, making this a genuinely nourishing bowl rather than just comfort food. Coconut aminos stand in for conventional soy sauce, keeping the dish free from common digestive irritants without sacrificing any of that savory depth. Carrots, parsnips, and celery cook right alongside the meat, soaking up all that herby, slightly sweet braising liquid so every bite is loaded with flavor. A handful of fresh parsley scattered over the top at the end adds brightness and ties the whole platter together. This is the kind of recipe that proves eating with your gut in mind doesn't mean settling for anything less than spectacular.

Preheat the oven to 325°F (165°C). Pat the chuck roast thoroughly dry with paper towels. In a small bowl, combine 1 tsp of the salt, the turmeric, and the ginger, then rub the mixture evenly over all sides of the roast.
Heat the coconut oil in a large Dutch oven over medium-high heat until shimmering. Add the roast and sear undisturbed for 4–5 minutes per side, until a deep brown crust forms and the meat releases easily from the pot. Transfer the seared roast to a plate.
