Few things hit harder on a cold evening than a slow-braised chuck roast that's been coaxed into falling-apart tenderness over several hours in the oven. The deep brown sear you get from that initial time in the Dutch oven builds a savory crust that carries through every bite, while the braising liquid — built from pomegranate juice, bone broth, apple cider vinegar, and a touch of honey — creates something rich and slightly sweet that you'll want to spoon over everything on the plate. Carrots, parsnips, and celery soak up all of that flavor as they braise alongside the meat, turning into soft, deeply savory bites that round out the whole dish. Avoiding citric acid can be genuinely tricky with braised beef recipes, since many store-bought broths, condiments, and flavor boosters sneak it in as a preservative — but this one keeps things clean with coconut aminos and straightforward pantry staples you can easily vet. The warm spice rub of turmeric and ginger gives the roast an unexpected depth without leaning on anything processed or hard to source. Fresh thyme, rosemary, and bay leaves do the heavy aromatic lifting, so the finished dish smells as incredible as it tastes. A scatter of flat-leaf parsley at the end brightens the whole platter and makes it look like you spent way more effort than you actually did.

Preheat the oven to 325°F (165°C). Pat the chuck roast thoroughly dry with paper towels. In a small bowl, combine 1 tsp of the salt, the turmeric, and the ginger, then rub the mixture evenly over all sides of the roast.
Heat the coconut oil in a large Dutch oven over medium-high heat until shimmering. Add the roast and sear undisturbed for 4–5 minutes per side, until a deep brown crust forms and the meat releases easily from the pot. Transfer the seared roast to a plate.
