This fiery, golden tonic is the kind of thing that makes you feel like you're doing something genuinely good for yourself with every sip. Horseradish, ginger, turmeric, garlic, citrus, and cayenne all steep together in raw apple cider vinegar for two weeks, building a bold, complex flavor that's sharp, warming, and just a little bit addictive once you balance it out with raw honey. Because it's built entirely on whole roots, spices, and vinegar, there's no fermentation with yeast involved — just a slow, cold infusion that anyone avoiding yeast can feel completely confident about. The raw apple cider vinegar with the mother does all the heavy lifting here, pulling the heat and brightness from each ingredient without any culturing or leavening process. It takes almost no active effort — a daily shake and a little patience is really all that stands between you and a jar full of something seriously potent. A small shot on its own or stirred into warm water is the classic move, and the batch keeps in the fridge for up to six months, so one prep session goes a long way.

Add the grated horseradish, grated ginger, grated turmeric, sliced garlic, lemon zest and juice, orange zest and juice, crushed black peppercorns, and cayenne to a clean 1-quart wide-mouth glass jar. Tuck in the rosemary sprig, if using.
Pour the apple cider vinegar over the solids, pressing them down gently so everything is submerged. The jar should be nearly full; if the solids are not covered, add a splash more vinegar.
