This bold, fiery tonic is the kind of thing that makes you feel genuinely alive the moment it hits the back of your throat. Horseradish, ginger, turmeric, garlic, citrus, and cayenne all steep together in raw apple cider vinegar for two weeks, building into something deeply complex, warming, and a little addictive. Raw honey rounds out the heat with just enough sweetness to make it sippable rather than punishing. Every single ingredient here is naturally free of thickeners and binders — there's no processing, no additives, just whole roots, spices, and vinegar doing exactly what they've done for centuries. The two-week infusion process is mostly hands-off; a daily shake is all it takes while the liquid deepens in color and the aroma grows more intense. Once strained and bottled, it keeps in the refrigerator for up to six months, so one batch goes a long way. Take a small shot straight, stir it into warm water, or drizzle it over food — however you use it, this tonic earns its place in the kitchen.

Add the grated horseradish, grated ginger, grated turmeric, sliced garlic, lemon zest and juice, orange zest and juice, crushed black peppercorns, and cayenne to a clean 1-quart wide-mouth glass jar. Tuck in the rosemary sprig, if using.
Pour the apple cider vinegar over the solids, pressing them down gently so everything is submerged. The jar should be nearly full; if the solids are not covered, add a splash more vinegar.
