This fiery, golden tonic is a powerhouse of bold, living ingredients — horseradish, ginger, turmeric, garlic, citrus, and raw apple cider vinegar all working together in one intensely aromatic brew. It's the kind of thing that clears your sinuses, wakes up your whole system, and makes you feel genuinely good about what you just drank. Since it's built entirely from roots, citrus, spices, and vinegar, there's nothing here that conflicts with avoiding red meat — no hidden animal proteins, no ambiguous broths, just plants doing their thing. The two-week steeping process is where the magic happens: the liquid deepens in color, the flavors meld and mellow, and by the time you strain it, you've got something that tastes far more complex than the sum of its parts. A drizzle of raw honey at the end softens the sharp edges just enough without losing that signature kick. Take it as a small daily shot, stir it into warm water, or use it as a bold base for salad dressings — it's endlessly versatile. Once you have a jar of this in the fridge, you'll wonder how you ever went without it.

Add the grated horseradish, grated ginger, grated turmeric, sliced garlic, lemon zest and juice, orange zest and juice, crushed black peppercorns, and cayenne to a clean 1-quart wide-mouth glass jar. Tuck in the rosemary sprig, if using.
Pour the apple cider vinegar over the solids, pressing them down gently so everything is submerged. The jar should be nearly full; if the solids are not covered, add a splash more vinegar.
