This fiery, fermented tonic is the kind of thing that makes you feel like you're doing something genuinely good for yourself — because you are. Horseradish, ginger, turmeric, garlic, citrus, and cayenne all steep together in raw apple cider vinegar for two weeks, building a deeply aromatic, gut-punching elixir that's finished with a touch of raw honey to balance the heat. The result is bold, bright, and a little bit addictive in the best possible way. Every ingredient here is whole, plant-based, and completely transparent — no mystery additives, no shared-facility concerns, just real roots and spices doing their thing in a jar. The process is mostly hands-off: a daily shake and a little patience are all it takes before you're straining out a gorgeous, amber-colored tonic that keeps in the fridge for up to six months. Take it straight as a morning shot, stir it into warm water, or use it as a zingy base for dressings and marinades. It's the kind of recipe that rewards you long after the initial ten minutes of prep.

Add the grated horseradish, grated ginger, grated turmeric, sliced garlic, lemon zest and juice, orange zest and juice, crushed black peppercorns, and cayenne to a clean 1-quart wide-mouth glass jar. Tuck in the rosemary sprig, if using.
Pour the apple cider vinegar over the solids, pressing them down gently so everything is submerged. The jar should be nearly full; if the solids are not covered, add a splash more vinegar.
