Classic béarnaise is one of those sauces that feels almost impossibly luxurious, and this fennel-forward version delivers all of that richness while keeping the ingredient list clean and low-histamine friendly. Traditional recipes often call for white wine and wine vinegar in the reduction, both of which are high-histamine culprits — here, white grape juice and water do the job beautifully, pulling the bright, herbal flavor from the tarragon stems and finely chopped fennel without any of the fermented ingredients that can cause problems. The result is a silky, buttery sauce with a subtle anise note that feels every bit as elegant as the original. Pasteurized egg yolks are whisked gently over a double boiler until thick and safe, then finished with cold butter piece by piece until the sauce turns glossy and spoon-coating. Fresh tarragon leaves stirred in at the end keep the herb flavor vivid and clean rather than muddy. Spoon it over simply cooked proteins or steamed vegetables and it genuinely transforms the plate. It takes a little patience at the stove, but the technique is straightforward and the payoff is absolutely worth it.

Combine the white grape juice, water, chopped tarragon stems, and fennel in a small saucepan over medium heat. Bring to a simmer and cook until the liquid reduces to about 2 tablespoons, 5–7 minutes. Pour through a fine-mesh strainer into a heatproof bowl, pressing the solids to extract all the liquid; discard the solids.
Add the pasteurized egg yolks to the strained reduction in the heatproof bowl and whisk until the mixture is smooth and slightly thickened.
