Classic béarnaise is one of those sauces that feels almost impossibly luxurious — silky, buttery, and fragrant with fresh herbs — and this fennel-kissed version takes it somewhere even more interesting. The finely chopped fennel bulb goes into the reduction alongside tarragon stems and white grape juice, building a delicate anise-forward base that carries through every spoonful of the finished sauce. Because the entire recipe is built from scratch using real butter, egg yolks, and fresh aromatics, there are no hidden stabilizers, lecithins, or emulsifying additives to worry about — just pure, clean ingredients doing exactly what they're supposed to do. The double-boiler method gently coaxes the yolks into a stable, velvety emulsion without any shortcuts, and adding the butter one piece at a time is the key to that glossy, spoon-coating texture. A final stir of finely chopped tarragon leaves brightens the whole thing and makes it taste unmistakably fresh. Spoon it over grilled steak, roasted fish, or steamed asparagus and it will absolutely steal the show.

Combine the white grape juice, water, chopped tarragon stems, and fennel in a small saucepan over medium heat. Bring to a simmer and cook until the liquid reduces to about 2 tablespoons, 5–7 minutes. Pour through a fine-mesh strainer into a heatproof bowl, pressing the solids to extract all the liquid; discard the solids.
Add the pasteurized egg yolks to the strained reduction in the heatproof bowl and whisk until the mixture is smooth and slightly thickened.
